View specificationsCarob syrup and molasses are concentrated carob-pod juice at roughly 70–75° Brix, used as spreads and as a natural sweetener that also brings colour. Carob powder is the milled, deseeded pod — raw for a milder, sweeter note, roasted for a deeper cocoa-like flavour — and is used to part-replace cocoa in confectionery, bakery and drinks. Locust bean gum is milled from the carob seed endosperm and is a galactomannan thickener that works synergistically with carrageenan and xanthan.
For syrup and molasses: Brix, pH, and pure vs blended. For powder: particle size, roast level, fat and sugar content, and micro status for no-cook use. For gum: viscosity at a stated concentration and temperature, mesh, and whether it is a clarified (cold-water-soluble) or standard grade.

Yes. Locust bean gum, carob bean gum and E410 are the same ingredient — a galactomannan milled from the carob seed. Both names are listed because buyers search for both; it is one product.
Not exactly. Carob is naturally sweeter and lower in fat, so recipes usually need less added sugar and a small fat adjustment. Roasted carob powder is the closer match for flavour. We will send a sample for your bench trials.
