Choosing a carob product

Carob syrup and molasses are concentrated carob-pod juice at roughly 70–75° Brix, used as spreads and as a natural sweetener that also brings colour. Carob powder is the milled, deseeded pod — raw for a milder, sweeter note, roasted for a deeper cocoa-like flavour — and is used to part-replace cocoa in confectionery, bakery and drinks. Locust bean gum is milled from the carob seed endosperm and is a galactomannan thickener that works synergistically with carrageenan and xanthan.

Specification points

For syrup and molasses: Brix, pH, and pure vs blended. For powder: particle size, roast level, fat and sugar content, and micro status for no-cook use. For gum: viscosity at a stated concentration and temperature, mesh, and whether it is a clarified (cold-water-soluble) or standard grade.

Packaging

Syrup and molasses in retail jars, 5 kg pails, 25 kg buckets and IBCs. Powder and gum in 20–25 kg lined multi-wall sacks.

Carob Products: buyer questions

Is carob bean gum the same as locust bean gum?

Yes. Locust bean gum, carob bean gum and E410 are the same ingredient — a galactomannan milled from the carob seed. Both names are listed because buyers search for both; it is one product.

Can carob powder replace cocoa one-for-one?

Not exactly. Carob is naturally sweeter and lower in fat, so recipes usually need less added sugar and a small fat adjustment. Roasted carob powder is the closer match for flavour. We will send a sample for your bench trials.

Do you supply organic carob products?

Certified organic carob syrup and powder are available subject to season and certifier. Confirm your volume and certification body and we will tell you what can be committed.
