Overview
Carob bean gum is a galactomannan milled from the endosperm of the carob seed. It thickens and stabilises, controls ice-crystal growth in ice cream, and works synergistically with carrageenan and xanthan. Standard grade hydrates with heat; a clarified grade is cold-water soluble.
