Overview
Date jam is date paste and juice cooked to a smooth, spreadable set. It is used as a breakfast spread, a filling for bakery and confectionery, and a condiment. Sweetness and set are standardised to your target Brix; a version bound with fruit pectin is available for reduced sugar.
