Overview

Sun-dried tomatoes are partially dried tomato halves, kept pliable rather than crisp. They are supplied dry-pack for you to rehydrate or marinate, or ready in sunflower or olive oil. Because they retain moisture, the useful control points are water activity and the microbiological result — both are on the certificate of analysis.

Salt level and whether sulphur is used to hold colour are set by your specification.

Sun-Dried Tomatoes: common questions

Do dry-pack sun-dried tomatoes need refrigeration?

Dry-pack product is shelf stable if kept cool and sealed. Once you rehydrate it or pack it in oil without an acidification or preservative step, it needs refrigeration and a defined shelf life. We provide the water activity so your food-safety team can set controls.

Can you supply without sulphur?

Yes. Unsulphured product is darker and needs tighter stock rotation. It is required for organic and many clean-label specs; we will confirm the SO2 status on every lot.

What oil do you use for the in-oil packs?

Sunflower oil as standard, or olive oil, or a blend — your choice. Herb and garlic additions are to your recipe and declared for allergen review.
